Glossary
Keye Wat:Homemade tomato sauce stewed with fresh onions, garlic, ginger root and olive oil. This sauce is the base for many of our dishes.
Tibs: This word means “sauteed meat” or “stir fried”. We cook beef, lamb, chicken and even eggs this way.
Alicha: This word means “mild” or “not spicy”.
Injera: Homemade thin, pancake-like, sour bread made from barley and Teff flour. Teff is native to the northern Ethiopian Highlands. It is high in dietary fiber and iron with some protein and calcium.
Himbasha: Homemade leavened bread flavored with honey, fenugreek, thyme, cinnamon and cardamom.
Berebere: Our homemade hot sauce comes two ways — Mitmita: Hot pepper, onions, garlic and an array of herbs and spices dried and ground into a spicy powder. Awaze: similar to mitmita but mixed with homemade Ethiopian mustard and water.
